Chutney is a term for a class of spicy preparations used as an accompaniment for a main dish (like dosa, idly, chapatti etc...). Chutneys usually contain an idiosyncratic but complementary spice and vegetable mix.
Ingredients:
- Tomato - 4 (chopped)
- Big onion - 1 (chopped)
- Oil - 2 table spoon
- Mustard seed - 1/2 tea spoon
- Urad dal - 1/2 table spoon
- Red chilli - 3
- Curry leaf - 10 leaves
- Salt to taste
Preparation:
- Heat the oil in the frying pan.
- Fry urad dal in the oil till it becomes golden brown. Take from oil and keep it aside.
- Sauté (fry) Onion in the oil till it becomes golden brown and add tomatoes to it and sauté it till it becomes soft and can be mashed.
- Add red chilli to it and sauté till it becomes dark red and big in size.
- Grind the fried item along with the urad dal, salt to make a paste without adding water.
- Heat oil and fry the mustard seed till it splutters out. Now add curry leaf to it and fry it.
- Add the curry leaf and mustard seed to the grinded paste and this adds flavor to the chutney.
